Quick & Easy Classic Basil Pesto
Try this basil pesto recipe. It’s quick, flavorful, and comes together with just a few ingredients—starting with the local basil from our produce department.
Ingredients:
– 2 cups (60g) fresh basil leaves
– 1/3 cup (48g) pine nuts
– 1/3 cup (25g) freshly grated or shredded parmesan cheese
– 3 small cloves garlic (roasted or fresh)
– 1/3 cup (80ml) olive oil
– 1 teaspoon fresh lemon juice
– 1/4 teaspoon salt
– Freshly ground black pepper, to taste
Instructions:
1. In a food processor or blender, pulse together the basil, pine nuts, parmesan, and garlic until everything is finely chopped.
2. Scrape down the sides of the bowl, then add the olive oil, lemon juice, and salt. Continue to pulse until the mixture is smooth and well-blended.
3. If the pesto seems too thick, add a little more olive oil to achieve your desired consistency.
4. Taste and season with freshly ground black pepper and additional salt, if needed.
